Prawns With Cannabis and Zoodles
Prawns with cannabis and zoodles (zucchini noodles, also known as courgettes)
Zoodles are everywhere! As more and more people eliminate gluten from their diet, the zucchini noodle has found loyal fans. Zucchini noodles cook fast and are a delicious substitute especially with prawns.
Many supermarkets now offer pre-made Zoodles in the produce department which is a nice convince if you are living a fast paced life on the go but they are a bit expensive compared to the price of a zucchini. You can make your own very easily and a lot cheaper by using a vegetable peeler and a knife.
Here’s how you make Zoodles or Zucchini Noodles
Wash a zucchini about 10 inches long and trim the top and bottom off so you have flat ends.
Using a vegetable peeler, slice strips of zucchini off and stack. Stop peeling when you hit the seeds in the centre then rotate zucchini and repeat making slices and stacking down to the seed core.
Rotate and do the 3rd and finally 4th side of the zucchini.
Take a sharp knife and carefully slice the stacks into long strips to make about as wide as linguini or fettuccine…whichever you prefer. Separate strips and reserve for later.
This recipe is quick to make once all your prep work is done and you can easily prep this dish ahead of time and put it together in less than 10 minuets when you get home from work.
Ingredients (serves 2)
1 TBSP CannaOliveOil
2 TBSP diced bacon (optional)
1 TSP decarboxylated cannabis bud
8 oz peeled and cleaned prawns
2 cloves of garlic minced
1 shallot minced
3 cups zucchini noodles
2 TBSP basil leaves chopped
2 TBSP chives chopped
1 TBSP CannaButter
1/2 lemon, juiced
Salt and pepper to taste
Have all your ingredients ready because this cooking process goes very quickly.
Heat a large sauté pan on medium-high heat.
Add CannaOliveOil and diced bacon. Sauté to release the fat and smoky flavors, about a minute.
Add the dried cannabis bud and sauté quickly.
Add prawns and turn the heat up to high. Sauté for one minute. Turn shrimp often.
Add garlic and sauté for 30 seconds then move the prawns, garlic, cannabis and bacon to a separate dish so you do not over cook the prawns.
Add shallots and sauté in remaining fat in the pan.
Add the zucchini noodles then add the CannaButter and lemon juice. Sauté stirring often until wilted.
Add fresh herbs, salt and pepper and the prawn mixture back to the pan and toss to incorporate.
Turn off heat and serve!
