CannaHoney and Honey Simple Syrup

CannaHoney is a great ‘go-to’ in any kitchen. If in a crisis, a small spoonful in the mouth can provide immediate relief. It can be used daily on yogurt or added to breakfast smoothies. In the afternoon spread it with peanut butter or almond butter for a protein snack and in the evening add it to a cup of hot tea. CannaHoney and Simple Syrup is the easiest and tastiest way to add more cannabis into your diet.

How To make a cannabis infused honey:

This method uses a double boiler to keep the honey at a low regulated temperature to prevent burning and scorching. Cooking sugars can be tricky because they burn easily and transform by heat. For example, when you make caramel you are simply heating granulated sugar over heat to a high temperature. Keep that in mind when cooking with honey. If you cook it too high you may end up with a very thick caramel product. That will probably taste yummy but all of that cannabis will be concentrated so it will be much more powerful. By cooking the honey in the double boiler, we can monitor how much it reduces or thickens and we can slow down the cooking process for a delicious honey.

Remember, low and slow!! Here we go!! 

You will need:

Double boiler

Rubber spatula or a wooden spoon (don’t use metal spoons because they conduct heat and you can burn yourself)


Cheesecloth to fit generously over strainer to filter honey

NOTE: If you don’t have a double boiler, use 2 saucepans, with more water in the bigger one than the smaller one. The goal is to keep the honey and cannabis cooking above the water and at a lower temperature. High temperatures cook sugars into caramels and burn easily.

Double Boiler System


1 pound (half a kilo, 500gm) of local honey

1 oz of Decarboxylated cannabis

1 double-boiler or saucepans as depicted.

Bring water to a boil in the bottom of the double boiler.  Place top pan in the water. Add the honey and cannabis in the top pot. 


Stir to combine

 Lower temperature to simmer or gently rolling bubbles. Cook stirring every 15 minutes for 3 hours or more. 

 Halfway through cooking time the honey will go from a soft yellow colour to darker, more amber appearance.

Be sure to keep an eye on the water level when you stir and add more water. An easy way is to keep a kettle of hot water close at hand and refill as needed.




After 3 hours, turn off heat and allow to cool for 10 minutes before straining so you will be able to work with your honey. It will be very hot.


Strain honey through a cheesecloth and strainer and SAVE for Simple Syrup Recipe. 

Cool and label right away. Store in glass jars in the refrigerator for maximum shelf life. This item can also be canned for year long shelf life.

CannaHoney Simple Syrup Recipe

Return the Honey Cannabis leaves, stems and bud that were just used into the same top pot that the honey was just used.

Cover with 1 litre (around 2 pints) of fresh filtered water. 

Place directly onto the heat and bring to a boil for one minute

Turn off heat and allow it to steep for 20 minutes or overnight, covered. 

Strain using the same cheesecloth and strainer to remove plant material. Store in squeeze bottles for easy addition to any beverage. Always label your Cannabis items for safety purposes, as shown.
